Hash Brown Egg White Nests 

Gina’s Weight Watcher Recipes

  •  olive oil spray
  • 1/2 cup minced onion
  • 1 cup shredded potatoes, Simply Potatoes
  • dash of garlic powder
  • salt and pepper to taste
  • 1 cup egg whites or egg beaters, beaten
  • 2 tbsp diced onions
  • 1/4 cup diced bell peppers
  • 0.8 oz reduced fat swiss, chopped
  • 1 oz turkey ham, diced
  • dash of garlic powder
  • salt and pepper to taste
  1. Preheat oven to 375°. Lightly spray a muffin tin with oil spray. 
  2. Combine potatoes, 1/2 cup onion, garlic powder, salt and pepper. 
  3. Fill each muffin tin with 1/4 cup of potatoes and press along the side of the tin so that it forms a nest. 
  4. Bake 35 minutes or until golden brown and edges are crispy.
  5. While nests are baking, combine the egg whites with remaining ingredients in a medium bowl.  
  6. Remove nests from the oven when golden brown.
  7. Fill each cup with about 3 tbsp of egg mixture. Return to the oven and bake an additional 17-20 minutes or until eggs are fully cooked.

Makes three servings of two “muffins” each.  134 Calories per serving.

 Fat: 1.8g / Carb: 15.3g (Fiber: 1.8g/ sugar .6g)/ Protein: 13.2 g

Sometimes I get these thoughts:
THOUGHT: Through work I’ve done with groups, I have discovered that one must be very careful. Sometimes people tend to join a group with similar goals and similar ideas. They begin to think as one and act as one, and they develop a mindset of the one. They tend to be against people that don’t think like them, that’s why being an individual isn’t very common, people are scared they won’t be accepted or that they will be attacked if they don’t conform. For individuals being in the group can be dangerous because in order to belong they must compromise their morals or their truth of self. One can’t feel free to think differently because the group is more powerful than the individual.
EXAMPLE: The elections so many people are fired up for or against Obama/Romney based on his speeches, actions, or based on the people you hang out with loving him or hating him.
MORAL OF THE STORY: Think for your-self’s people please, do the research and create your own opinion, yeaa you may be wrong or right (what is right and wrong anyway?) but if you individualize yourself you will be better off. The loudest and the majority are not always right! I may not be even right about what I just said.

Stupid Lady.

The awkward moment when you are at work and call someone to schedule an appt. And they ask you how old you are, you tell them, and they tell you you need to find your “Big girl voice” because you sound like you are twelve. Well lady you are 40+ years old and you are probably angry at our generation because your husband probably ran off with a 20 year old. I appreciate the advice but you don’t know me and don’t know what i have accomplished with my 12 year old voice…jaja. Its called being nice and friendly on the phone, Thannkkkss!!!


Today I was thinking about sharing my blog with my Facebook friends, not a very good idea yet….the world that I live in is not ready to read this blog. With everything I do I have to put up a front and be nice and not give my opinion because it may hurt others, this is not what i want this blog to be. I want this to be 100% me and what I think, sure, it may be mean, it may hurt people’s feelings but hey…there may be people out there that post things that hurt me. we are sooo wrapped up in making people feel ok than expressing our feelings. I don’t want to be a total  b-word but it is what it is.
